Almond Butter Energy Bites

The struggle is real! I know I’m not the only one who struggles with trying to balance the biggest sweet tooth in the world while also trying to maintain a healthy diet. Sadly, my sweet tooth wins a lot more than I would like to admit. Luckily for you, I’ve come up with a special treat that will trick your sweet tooth into believing you’re satisfying its cravings with something that is nothing short of delectable.

 

 

Almond Butter Energy Balls

I can’t tell you how many times this delicious snack has pulled me through some serious cravings. There are small but packed with sweetness and flavor. The best thing about it, there are so easy and simple to make. And you probably have all the ingredients on hand already.

 

Here’s what you’ll need 

  • 1/3  cup  all natural sugar free almond butter* thoroughly stirred
  • 2  tablespoons  of honey
  • 1 teaspoon of vanilla extract
  • 1/8  teaspoon salt (disregard if your almond butter is already salted)
  • ¾   cup  old fashioned oats 
  • ¼ cup dry roasted nuts of your choice
  • dark chocolate melted for drizzling/dunking

First thing first,

start by placing almond butter, vanilla extract, salt, and just a touch of honey into a mixing bowl.

Mix well. Use electric mixer or use you can mix by hand if your looking for a bit of an arm and upper body workout.

Next, mix in the oats and some rough chopped nuts! My favorites / go to’s are almonds, walnuts and/or pecans.

Finally, scoop the mixture into even bites by using a cookie scooper. Use your hands to form them into balls.

Optional – you can dunk or drizzle them with a little melted dark chocolate.. Mmmmhmmmm!!!

Almond butter energy balls are an amazing healthy snack that great for the entire family. Simply prepare and store in a zip lock bag or container and put in the fridge. Not that they will stick around for long.
